Ingredients: tostada shells or corn tortillas, medium tomatoes, medium avocados, red onion, cilantro, ground cumin, chili powder, salt, lime, low sodium black beans, chicken, cotija cheese or feta, cooking spray
Steps:
Preheat oven to 375°F and line a baking sheet with parchment paper. Spray the tostada shells or tortillas with cooking spray and bake for about 10 minutes, or until crisp and golden.
In a medium bowl, toss the tomatoes, avocados, onion, cilantro, cumin, chili powder, salt, and lime juice together. Set aside.
In a small saucepan over medium heat, warm the black beans until heated through, stirring occasionally. Mash some of the beans with a fork if desired.
