Chicken Tostadas: A Crispy and Flavorful Meal in 30 Minutes

- Chicken Tostadas: These are crispy corn tortillas topped with shredded chicken, black beans, tomatoes, avocados, onion, cilantro, cumin, chili powder, lime juice, and cotija cheese. They are a satisfying and balanced meal that is low in calories, high in fiber, and rich in protein and healthy fats. Recipe 

- Ingredients: tostada shells or corn tortillas, medium tomatoes, medium avocados, red onion, cilantro, ground cumin, chili powder, salt, lime, low sodium black beans, chicken, cotija cheese or feta, cooking spray 
- Steps: 
- Preheat oven to 375°F and line a baking sheet with parchment paper. Spray the tostada shells or tortillas with cooking spray and bake for about 10 minutes, or until crisp and golden. 
- In a medium bowl, toss the tomatoes, avocados, onion, cilantro, cumin, chili powder, salt, and lime juice together. Set aside. 
- In a small saucepan over medium heat, warm the black beans until heated through, stirring occasionally. Mash some of the beans with a fork if desired. 
- In another small saucepan over medium heat, warm the chicken until heated through, stirring occasionally. Shred the chicken with two forks if needed. 
- To assemble the tostadas, spread some of the black beans over each tostada shell or tortilla. Top with some of the chicken, tomato-avocado salsa, and cheese. Enjoy!
